Leccino olives are among the most cultivated olives in Italy, given their delicate flavor. Their origin is supposed to be from Tuscany, and exists reference since the Middle Ages.
This variety of olive (the black Leccino olives) does not have extremely long maturation times due to their medium-small size, with high and constant productivity, soon reach their characteristic color (between dark green and dark purple). Furthermore its shape is rather elliptical and not regular.
Their collection follows the traditional method, which keeps the taste and its organoleptic characteristics unchanged. Its uses are many, being an olive that can be easily used in any type of processing.
They are particularly suitable for marinades, thanks to their delicacy of flavor and their small size. But they can easily be used to flavor both first and second courses, such as salmon steaks ... or to create an excellent bruschetta with their paté.
